The flavorful surimi in the soft roll of flounder fillet brings together a beautiful dish your family will truly enjoy.
6 flounder fillets
1 tsp. mustard
1 tsp soy sauce
1/2 tsp salt
1/4 tsp ground white pepper
7 Tbs. mayonnaise divided
9 surimi sticks/kani,
sliced into ¼ inch rounds
1/3 cup finely diced red pepper
1/3 cup crushed saltine crackers
6 tsp. margarine
1 egg yolk
Paprika for sprinkling
Parsley flakes, for sprinkling
Preheat oven to 350°
Combine mustard, soy sauce, salt, white pepper and 2 tablespoons of the mayonnaise in a bowl; stir until smooth.
Add sliced surimi, diced red pepper, and crushed saltines; mix to combine.
In a separate bowl, combine the remaining 5 tablespoons mayonnaise and egg yolk until smooth. Set aside.
Fill the center of fillet with the surimi mixture, and roll it up by bringing the 2 ends together. Place seam side down n a baking sheet, and spread 1 tsp. margarine onto the top of each flounder roll. Bake for 1 minutes.
Remove from oven, and spread the mayonnaise mixture over each roll. Sprinkle first with paprika and then parsley flakes. Bake an additional 8 minutes, until bubbly and golden.
