Great for an occasion, dress it up by rolling or keep it simple and just spread the peppers on top. The 3 peppers add both color and lots of nutrients.
3 small peppers, red, yellow, and orange cut into small squares.
1/2 onion, diced
1 Tbsp. oil
Salt to taste
4 trout fillets
1/2 cup Freund’s Fish Sedona Sauce
Preheat oven to 450°.
In a small pan, mix the peppers, onion, oil, and salt.
Roast for 10 minutes.
Place some of the pepper mixture on one half of the fillet, roll up and place in pan.
Continue with the rest of the fillets.
Pour on the Sedona sauce.
Bake at 350° for 15 minutes covered, and 15 minutes uncovered.
