Moroccan Style Salmon

This flavorful hearty dish will definitely leave you satisfied, and is sure to become a family favorite. When short on time you may want to order the ready Freund’s Matbucha/Freund’s diet Matbucha.

20 1 inch salmon cubes
Freund’s House Seasoning
Matbucha Sauce:
2 green bell peppers (3/4 lb total) diced
2 cans diced tomatoes or 8 large tomatoes peeled and diced
1 garlic clove minced or 1 frozen garlic cube
2 tsp sugar
1 tsp pepper flakes (optional)
1/2 tsp salt
1/4 cup olive oil
2 tsp paprika
1/2 tsp black pepper

Fish:
Preheat oven to 375°.
Season the salmon lightly with Freund’s House.
Seasoning.
Put cubes in a baking pan and add matbucha sauce to cover completely. Bake uncovered for 25-30 minutes.
It should be bubbly around the edge and salmon should be slightly brown.
Matbucha Sauce:
Heat olive oil in a pot over medium heat.
Stir in garlic, tomatoes, and peppers.
Season with sugar, paprika, black pepper and salt.
Cook for 20 minutes stirring occasionally until vegetables are tender.
Reduce heat to low, cover and cook until liquid evaporates and mixture thickens; approximately 1 ¼ hours.
