This recipe features a new twist on your typical encounters with Surimi sticks/ Kani. These fish cakes are really moist and not very fishy tasting. They’re perfect for a child friendly supper.
1 box Freund’s Surimi Sticks/ Kani
1/2 sleeve snackers, finely crushed
2 Tbs. mayonnaise
2 heaping tsp. Freund’s bay seasoning
2 tsp. parsley flakes or 2 frozen cubes
1/4 tsp. salt
1/ 2 tsp. mustard
2 eggs beaten with a fork
Simply Made Tartar Sauce:
1 cup mayonnaise
1 sour pickle grated
1 tsp. mustard
½ tsp sugar
Slice each kani stick into circles, and then crumble by hand. In a bowl mix kani with the rest of the ingredients until well combined. Shape into medium sized patties; fry until golden brown on each side. Remove from frying pan with spatula. Drain on paper towel.
Optional: Serve with Simply Made Tartar Sauce.
