Diet Surimi Salad

For all you California sushi roll lovers, this change-of-pace recipe is just for you! The sweetness and crunch of the salad ingredients combined with the spicy dressing is a sure winner.

12 surimi/ kani sticks
1 mango
3 baby cucumbers
3/4 cup French fried onions
Dressing:
¼ cup mayonnaise
2 Tbsp. Sushi Maven rice vinegar
½ tsp. sugar
½ tsp Sushi Maven sriracha sauce
½ tsp paprika
½ tsp ginger
Pinch of salt

Shred the surimi sticks into thin stringy strips by hand, and place into a bowl.
Slice the mango and cucumbers into thin strips and add to the bowl.
In a separate bowl mix the dressing ingredients together until smooth.
Toss the salad with the dressing and top with the French fried onions immediately before serving
